Healthy Recipes


This is a fantastic healthy light summer dessert.

4 Tablespoons organic orange juice concentrate, defrosted
2 Tablespoons of cold water
1 Teaspoon vanilla extract
Coconut oil or neutral tasting cooking spray
1 and 3/4 cups of coconut creamer(a sub for half and half)
1 and 1/2 teaspoons of unflavored gelatin
1/4 cup of coconut crystals sugar substitute or 1 tablespoon
of stevia

In a heavy saucepan sprinkle gelatin over the water. Let stand for a minute or two until the gelatin softens. Next stir in coconut creamer, coconut sugar or stevia, orange juice concentrate, and vanilla extract. Heat mixture but don’t bring to a boil until gelatin is dissolved. Next remove from heat and cool for 15 minutes, occasionally stirring.
Divide the mixture into 4 six ounce cups that are lightly greased with coconut oil or spray, cover, and refrigerate for four hours or until mixture has a chance to set.
To remove mixture from cups cut around edge with a sharp knife then place mixture in a bowl of warm water for ten seconds but if you greased cups you shouldn’t have to do this. Turn each cup upside down flipping them onto a dessert plate. If time is an issue, you can just pour mixture into wine glasses, cool, and serve. Garnish with berries if you like. Makes 4 servings.

This is a surprisingly tasty low calorie milkshake in either vanilla or chocolate versions.

1 cup Arctic Zero brand Vanilla Maple or Chocolate Ice Cream(only 37 calories per serving!)
1/2 cup of either low fat cottage cheese or full fat plain yogurt(organic please)
1/2 cup water
1/2 scoop(12 grams) either vanilla or chocolate protein powder
2 cups of ice cubes
1 tablespoon of vanilla extract
1 tablespoon of stevia sweetener or more per taste
Makes three one cup servings

Place all ingredients in a blender until mixed smooth. Enjoy!
Per 1 Cup Serving:
Calories: 67
Fat: 1.5 grams
Saturated Fat: 1 gram
Carbs: 6.5 grams
Sugars: 5.3 grams
Protein: 7 grams

Add one half banana to entire mixture and add 18 calories per serving. Or add 1/2 cooked sweet potato which adds 37 calories per serving. Or add both!
